I find being generally obnoxious helps. Like, eating food in a repulsive manner and getting all over the keyboard. Turning the radio on whenever they talk, or hum. Mutter under your breath when you look at them. Air your non hippie-vege views and (my favourite) state that any one would be stupid to believe that. Peta is a good starting points. They are a bunch of fools and you can discuss them loudly.

I'd eat some kind of meat that has grease and fat in it and have him see you it it. Then walk by and pat him on the back. He will be so upset over the juices on his body he may become ill or leave for the day.
tell him that you are conservative and preach on!! then ask him if he'd like to try a bit of your hot dog :P.
get a life and get some work done
ask him every day if he would like to go get a burger for lunch it pisses them off believe me i used to work with a vegetarian a while back
I wouldn't bother, he'd probably just feel sorry for you, and you'll end up looking the fool.
